We're thrilled to welcome back Dr. Pat Heist, co-founder/owner of Wilderness Trail, and even more excited to be selecting a barrel of their whiskey just for our club! Wilderness Trail is widely recognized as one of the most exciting, relatively new distilleries in Kentucky, and co-founded by Dr. Heist who also co-founded Ferm Solutions, which is the unequivocal go-to for the entire industry when it comes to cultivating unique yeast strains for fermenting whiskey. As a result, Dr. Heist, who is also the Chief Science Officer at Ferm Solutions, brings a perspective unlike anyone else making whiskey in the industry today. We had the pleasure of welcoming him as a guest speaker last year for our Save Our Whiskey Bars! Jack Rose benefit event, and had the pleasure of visiting with him briefly in person a couple months back at the Kentucky Bourbon Festival. We couldn’t be more proud to be given this opportunity to do a barrel pick with him.
So here are the full details -- everyone who signs up will participate in the barrel pick, which means you'll receive 6 samples for us to choose from, some bourbon, some rye. Everyone will decide which one is their favorite, and whichever barrel gets the most #1 votes will be the one we pick. Once we've picked a barrel, we'll move on to some other fun (and rare!) Wilderness Trail expressions:
Kentucky Bourbon Festival 2021 Bottling. Only available at the fest, it is aged 4 years, 6 months, ISC barrel char #4, 57.5% abv.
Wilderness Trail Harvest Rum. Handcrafted Small Batch, we picked this up at the distillery which is the only place you can get it as far as we know.
6 Year Old Wilderness Trail. Kentucky Straight Bourbon, Bottled in Bond. When we picked this up at the distillery a year or so ago, it had just been released and was only available there if I remember right, though I don't believe that's true anymore, but still I'm guessing very few of our members have had a chance to taste it yet. 50% abv.
Jack Rose Single Barrel Pick - Rye Family Reserve. And now something even older -- aged for 6 years, 5 months, bottle #61 of 180 bottles. The owner of Jack Rose, Bill Thomas, is such a big fan of WT, that he acted as a voluntary brand ambassador, coming to present the brand to our club back in February of 2020. When we did our Save Our Whiskey Bars! Benefit Event for Jack Rose last year, Pat and Shane, the co-founders of WT, joined as our guest speakers, and we picked up these bottles back then for that event, but had one left over for Wednesday. 52.5% abv.
